Pudgy’s Fine Cookies and Underground Creamery Are Bringing a New Dessert Spot to Meyerland

by Katie Day

Meyerland is getting a new destination for Houston’s sweet tooth.

Pudgy’s Fine Cookies and Underground Creamery are teaming up again to open a new dessert shop at 4798 Beechnut St. in the Meyerland Court shopping center. The location is expected to open in August 2026, bringing Pudgy’s thick, chewy cookies together with a new soft-serve concept from Underground Creamery.

The new shop will introduce Underground Softies, Underground Creamery’s take on soft serve. Unlike the brand’s popular rotating pint drops, Softies will give customers a more traditional ice cream-shop experience, with soft serve that can be customized with a selection of toppings.

And for anyone who has visited the duo’s Heights location, there’s another notable upgrade: actual seating.

A new way to experience Underground Creamery

Underground Creamery has built a following in Houston with creative, limited-run ice cream flavors that are often released through weekly drops. The Meyerland location will take a slightly different approach.

Underground Softies will focus on soft serve with a more streamlined menu, allowing customers to build their own dessert with toppings such as Oreo MSG, Biscoff grit, sea salt, olive oil and fudge. More topping options are expected to be added as the concept gets up and running.

A limited selection of Underground Creamery pints will also be available to take home, although the brand’s highly anticipated weekly pint drops will remain exclusive to its Heights location.

Cookies and ice cream under one roof

Of course, Pudgy’s Fine Cookies will be bringing its signature cookies along for the ride.

The Houston bakery is known for its oversized, crisp-edged, chewy cookies, including longtime favorites like The Pudgy, Bonanza Brulee and Wild Campfire. Seasonal and limited-edition flavors are also part of the brand’s appeal.

That makes the Meyerland location more than just another cookie shop or ice cream counter. The concept is designed around the combination: grab a warm, gooey cookie, pair it with soft serve and customize the whole thing with toppings.

It’s essentially the kind of Houston dessert run that can turn into a full neighborhood outing.

Why Meyerland?

The new shop will be the second combined location for the two Houston businesses, following their Heights collaboration.

For Pudgy’s founder Van Teamer and Underground Creamery owner Josh DeLeon, the partnership has grown beyond simply sharing a storefront. The two brands have collaborated on flavors and events while supporting each other as their businesses have expanded. The Meyerland location gives them an opportunity to bring that partnership into a more community-oriented setting.

The new space is also being designed to encourage customers to stick around. While the Heights location has largely been a grab-and-go experience, the Meyerland shop will include seating where customers can enjoy their cookies and ice cream on-site.

And for Meyerland residents, the biggest perk may simply be convenience: one of Houston’s better-known cookie-and-ice-cream combinations is coming closer to home.

When will Pudgy’s and Underground Softies open?

The new location is planned for 4798 Beechnut St. in Meyerland Court, with an August 2026 opening targeted.

Construction and renovation work at the 1,328-square-foot space has been documented in state permitting records, with the project scheduled for completion by the end of August.

An exact grand-opening date and initial Underground Softies menu have not been announced yet, so Houston dessert fans will want to keep an eye out for updates as the opening gets closer.

For Meyerland locals, though, the takeaway is simple: Pudgy’s cookies, Underground Creamery soft serve and a seat to enjoy both are coming to Beechnut.

And yes, this sounds like a pretty good excuse to plan a dessert run.
